Operation Pinterest - Homemade Pesto
Tuesday dinner conversation usually goes like this:
Me: Going to the store tomorrow any dinner requests?
Husband: (95% of the time) Hmmmm can’t really think of anything.
So for that rare 5% of the time he makes request I try to do what I can.
This particular night he said he really likes the Pesto Sausage Pasta (recipe here). So off to the store I went.
I am becoming notorious for forgetting half the things on my list these days so I wasn’t supposed to get home and find no pesto. Thankfully I remembered a recent link I saved on how to use pesto that included a recipe. Since I have my basil plants growing and was able to gather the other ingredients from my pantry I went for it and made fresh pesto.
Fresher is better!!! I cant believe how easy pesto is to make and how much better the flavors are. I had to make this in a magic bullet blender but the consistency was great and easy to adjust by adding more oil. The only thing I changed was I used grapeseed oil since that is what I keep in my pantry. I don’t think I can ever buy jar pesto again!
The one problem this event caused it that it reaffirmed my desire to get a food processor. I haven’t sprung for one because I don’t want a cheap one but have a hard time spending money on some kitchen electrics.
